Around my house this dish is a quick, easy and nutritious food staple! Typically I like to cook about every night during the week, but with work keeping me extra busy, I decided to make a little extra to last us 4 meals. Wow, right? To some, this may seem typical, and to some this may sound so unconventional. For me, I prefer to cook fresh meals every evening as much as I can, and when you enjoy cooking like I do, you somehow always find the time (or excuse).
We love this dish because it’s light (it’s loaded with veggies) but filling enough to keep you satisfied. I cannot promise you that you won’t go back for seconds, it is that good! I topped mine with a balsamic glaze, La Crema Pedroni directly imported from Italy, for a more balanced taste. You can also go for a more readily available one at your nearest grocery store. If you shop at Trader Joe’s, they have a pretty good one there too. The pork sausage links I purchased from Costco simply because they are delicious and I like the amount of sausages per bag. This recipe serves 8. Requires 2 rectangular 9×13 baking dishes.
Ingredients *Signifies an Organic Ingredient
- 1 Eggplant
- 3 Medium Zucchini*
- 5 Medium Rainbow Carrots*
- 9 Green Kale Leaves or 1 Soup Bowl-full*
- 1/2 Pack White Crimini Mushrooms*
- 1 Red Onion*
- 5 Medium Golden Potatoes*
- 2 Large Sweet Potatoes
- 10 Sprigs of Fresh Thyme (cleaned of stems)*
- 8 Garlic Cloves*
- 2 Bags of Pork Breakfast Sausages (about 32 thin sausages)
- 4 Tablespoons Salt (2 per baking dish)
- 2 Tablespoons Paprika (1 per baking dish)
- 3 Tablespoons Ghee or Butter (1.5 per baking dish)
- 2 Tablespoons Black Pepper (1 per baking dish)
- Balsamic Glaze
Preparation: 35min
- Wash, peel and chop up your veggies as shown above.
- Prepare both rectangular baking pans, and place melted ghee or butter inside.
- Evenly distribute all veggies, thyme and whole garlic cloves into both pans.
- Add according proportions of seasonings on top of each dish, and then stir it all in with your hands, so the spices get distributed evenly and the veggies get mixed.
- Add in the sausages, mixing them in a little with the veggies.
- Cover each pan with foil and bake.
- Serve and add balsamic glaze as topping.
- Enjoy!
Bake Temp: 400 Degrees | Bake Time: 1 hour 50 minutes, remove foil at 1 hour 30 mins.
