Around my house this dish is a quick, easy and nutritious food staple! Typically I like to cook about every night during the week, but with work keeping me extra busy, I decided to make a little extra to last us 4 meals. Wow, right? To some, this may seem typical, and to some this may sound so unconventional. For me, I prefer to cook fresh meals every evening as much as I can, and when you enjoy cooking like I do, you somehow always find the time (or excuse).

We love this dish because it’s light (it’s loaded with veggies) but filling enough to keep you satisfied. I cannot promise you that you won’t go back for seconds, it is that good! I topped mine with a balsamic glaze, La Crema Pedroni directly imported from Italy, for a more balanced taste. You can also go for a more readily available one at your nearest grocery store. I love meeting my husband for a lunchtime hike during the week days. I don’t know about you guys, but I ate soo much this holiday weekend. So many BBQs and reasons to gather with family and friends and just EAT. If your weekend was anything like mine, then you know what I am talking about! I couldn’t wait for Monday to get a chance to workout a little.
